Delicious Almonds & Quinoa Side Dish

Ingredients:



1 ½ cups quinoa, rinsed



1/2 cup almonds, toasted and sliced



2 tbsp. parsley; chopped.



1 celery stalk; chopped.



14 oz. chicken stock



1/2 cup yellow onion; finely chopped



1 tbsp. butter



1/4 cup water



Salt and black pepper to the taste



Directions:



Set your instant pot on Sauté mode; add butter and melt it



Add onion and celery, stir and cook for 5 minutes



Add quinoa, water, stock, salt and pepper; then stir well. close the lid and cook at High for 3 minutes.



Release the pressure naturally for 5 minutes, then release remaining pressure by turning the valve to ‘Venting’, and carefully open the lid



Fluff with а fork, add almonds and parsley; then stir. divide among plates and serve as а side dish.
