Ginger Sesame Chicken

1-pound boneless, skinless chicken breast, pounded to ¼ inch thick

2 teaspoons coconut oil

½ teaspoon salt

½ teaspoon coarse ground black pepper

½ teaspoon cayenne powder

1 tablespoon freshly grated ginger

2 tablespoons honey

¼ cup soy sauce

1 cup chicken broth

2 teaspoons sesame oil

1 tablespoon sesame seeds, toasted (optional)

fresh lemongrass for garnish (optional)

cooked rice for serving (optional)


Add oil to Instant Pot and press “Sauté” button. Season chicken with salt, black pepper, and cayenne powder, add the meat to the Instant pot.

Cook chicken for 3-4 minutes per side, or until it is no longer pink in the center. Press “Keep warm/Cancel” button.

Mix fresh ginger, honey, soy sauce, and sesame oil in a small bowl. Mix well and pour the sauce over the chicken. Add broth to the cooker.

Close the lid and seal with the vent.

Choose manual function, set the timer for 8 minutes and cook on high pressure.

Once cooking time is over, do the quick release. Open the lid.

Serve warm over rice, garnished with sesame seeds and lemongrass, if desired.
