Tomato Lime Beef Curry

1 lb. ground beef (95% lean)

1 leek, thinly sliced

2 garlic cloves, minced

1 teaspoon fresh ginger

1 tablespoon red curry paste

1 ½ cups canned tomato sauce

1 teaspoon lime zest

1 tablespoon coconut amines

1 cup canned light coconut milk

2 teaspoon lime juice

salt, pepper, to taste

Add oil to Instant Pot and press “Sauté” button.

Add beef and cook for 4-5 minutes until no longer pink. Season with salt and pepper. Press “Keep warm/Cancel” button.

Add leek, garlic, ginger, curry paste, tomato sauce, lime zest, coconut amines, coconut milk and lime juice to the Instant pot, mix well.

Close the lid and seal with the vent.

Choose manual function, set the timer for 6 minutes and cook on high pressure.

Once cooking time is over, do the quick release. Open the lid.
