Vegan Instant Pot Potato Curry

Ingredients:



1 onion, chopped



4 garlic cloves, chopped



2 tablespoons curry paste



2 cups water



1 tablespoon olive oil



2 cups fresh green beans, chopped



1 can coconut milk



1 tablespoon sugar



1 teaspoon chili pepper flakes



3 tablespoons cornstarch



Salt, pepper, to taste



Directions:



Press "Sauté" button on the pressure cooker, add oil and heat it up.



Add onion and cook for 3-4 minutes. Add garlic and cook for 1 more minute. Press “Keep warm/Cancel” button.



Add the rest of the ingredients to the Instant Pot. Close the lid and seal with the vent. Press “Manual” button set the timer for 20 minutes and cook on high pressure.



Once the timer is up, press "Cancel" button and allow the pressure to be released naturally, until the float valve drops down. Open the lid.
